Salads- May 21st, 2011

  1. Strawberry Salad with Vinaigrette- Tabitha Tibbitts

    2 heads of Romaine lettuce
    11 oz. Mandarin oranges (I also use whatever berries I have on hand)
    1 pint strawberries, cut up
    1/4 cup thinly sliced red onion
    1/2 cup chopped pecans
    1 avocado, peeled and diced

    DRESSING:
    1/3 cup olive oil
    1/3 cup raspberry vinegar (I never have this on hand, so I substitute apple cider vinegar)
    3 TBSP sugar
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 tsp tabasco (I have used cayenne pepper, Tapatio, and Chalula... all work fine)
    1/4 tsp pepper

    Chill salad until ready to serve. Toss with dressing just before serving.

  2. Kodi Smith brought her FAMOUS Chocolate Chip Cookies!

    Cream the following:
    1 lb. butter
    2 cups brown sugar
    1 1/2 cups white sugar

    Add and cream the following for 4 minutes:
    3 eggs
    2 Tablespoons vanilla

    Add the following:
    6 cups flour
    1 1/2 teaspoons salt
    1 1/2 Tablespoons baking soda

    Blend mixture slowly and thoroughly.

    Add:
    2 cups semi sweet chocolate chips

    Bake at 375 degrees for 8-10 minutes.

  3. Potato Salad

    7 Russet Potatoes
    4 eggs
    3/4 c. Mayo
    1/2 tsp. mustard powder
    2 tsp. salt

    Boil eggs and potatoes together for 40 minutes; check potatoes and remove eggs. Put items in fridge and cool. Dice potatoes and slice egg. Gently stir in mayo, dry mustard, and salt.
    Thirty minutes after setting, check taste and add more salt if needed. Potatoes may suck up the salt.

  4. I didn't bring this, but it's a good one.

    Taco Salad

    1/2 lb. hamburger
    1 can kidney beans (drain)
    1 bottle Catalina dressing
    1 head of lettuce (bite size pieces)
    1 pkg. Taco seasoning
    olives(sliced) cheese (shred)
    1 bag tortilla chips
    Cook hamburger and mix with seasoning. Mix all ingredients together. Add chips when you are ready to serve. Will go soggy otherwise.
